WHAT AWAITS YOU

The aim of the event is to immerse participants in the history, culture, farming traditions and species diversity of cocoa. The aim of the tasting is to show that chocolate is not just sweet cocoa, but a whole palette of flavours and aromas created by nature and revealed at our TЁRT KAKAO factory in Tallinn.

The main idea is to develop a culture of conscious choice of chocolate for work and personal consumption.

WHAT WE'LL EXPLORE

We will explore the world of cocoa and discuss the following topics:

  • Regions where cocoa is grown and cultivated
  • Classification and genetic varieties of cocoa
  • Stages of transforming cocoa into chocolate
  • Factors that influence the taste, aroma and characteristics of chocolate. How does craft chocolate differ from industrial chocolate?
  • Specifics of chocolate production using the Bean to Bar technology, which used at the TЁRT KAKAO chocolate factory.

TASTING EXPERIENCE

To expand the range of flavours, we offer chocolate tasting:

  • 100% cocoa content
  • 70% cocoa + 30% cane sugar
  • 55% cocoa + cane sugar + milk powder

This new taste experience will allow you to understand and feel how sugar and milk powder affect the pure taste of chocolate.

Sergei Tolstikov has devoted more than 35 years of his life to the art and science of cacao, transforming his passion into a lifelong pursuit of chocolate excellence. As the visionary founder of TËRT KAKAO, he has established one of Estonia's premier bean-to-bar chocolate manufactories in Tallinn, where traditional craftsmanship meets innovative techniques.
